BEER ROASTED CAT

1 cat cut into roast
1 can of Campbell's Cream of Mushroom soup
1 cube of beef bouillon
1 clove of garlic
1 Fine Irish Stout, a lot like a popular dark Irish BeerŪ, but NOT that brand at their lawyers' request. They alledge this article, educating others in the legal eating habits of over 100 million people world-wide, and specifically in rising East Asian markets, is "highly offensive."
Cover and soak cat roast in salt water for 24 hours. Drain water and then cover and soak in beer for 6 hours. Drain and place in crock pot with your cans of soup. Add a clove of garlic, and a cube of beef bouillon. If you start to slow cook your cat in the morning with your George Foreman Cooker (or it's ilk), you'll have finely cooked feline in time for supper. If a slow cooker is not available, a cat can be baked at 350 degrees for 2-3 hours in a conventional oven and still come out pretty good. Beer Roasted Cat is fantastic served with mashed potatoes, collard greens, and fresh, homemade egg rolls. When planning a full meal just remember- cat is a course best served hot!
Cat may not be the most glamorous, or tastiest of game meats, but with a little thought and preparation, Baked Cat can make the belly of the persnicketiest diner glow with home baked goodness.

***WHITE SAUCE: ***
1 tablespoon butter
2 tablespoons flour
3/4 cup milk; hot
***SCAMPI SAUCE:***
3 tablespoons butter
2 tablespoons garlic, crushed
1/2 teaspoon crushed red pepper
1 tablespoon dried cilantro, optional
2 teaspoons Italian seasoning
black pepper to taste
3/4 cup white wine
1 cup chicken broth
1/4 cup white sauce
***REMAINING INGREDIENTS:***
1/2 pk. angel hair pasta, cooked and drained
bell peppers; thinly sliced
red onions; thinly sliced
10 cloves of garlic; roasted
2 chicken breasts; sliced
olive oil

Directions:

For white sauce: Heat 1 Tbsp. butter in sauce pan, add 2 Tbsp. flour and cook for 2 minutes on med. heat. heat stirring constantly. slowly add 3/4 cup hot milk (hot so it won't get lumpy). Set aside. (Make sure that the white sauce is hot when adding to the scampi sauce)

For scampi sauce: Heat butter over low heat. add the garlic, Italian seasoning, crushed red pepper and black pepper. cook for about 2 minutes on low heat. add the wine and chicken broth. stir until combined. (I usually cook mine for about 30-40 minutes). add 1/4 cup white sauce and cook till slightly thickened. In a large skillet, saute chicken in a little olive till nearly done. add the peppers and onions, saute till chicken is done. add the sauce. saute until everything is warmed. add roasted garlic cloves. serve over pasta.

Make the garlic first
ROASTED GARLIC: Separate head of garlic into individual cloves still in 'paper'. toss in olive oil and wrap tightly in aluminum foil or a small pint sized dish with a lid. bake in 350* oven for 45 minutes. when the garlic has cooled to the touch you should be able to squeeze it out of the 'paper' shell of the individual cloves.

To prepare the chicken breast I flatten it(using a meat hammer, rolling pin, or frying pan.) Smash it really thin, coat it lightly in flour, cook in large skillet with a little olive oil.

This recipe has become a favorite in our house. I have made a few changes to the recipe... I don't use wine I use all chicken broth, and when it says to add 1/4 c. of white sauce I add all of the white sauce. Remember to keep the heat up on high after you add the white sauce, it makes the sauce thicken. It is delicious served with noodles or potatoes. This recipe takes a little effort but it is totally worth it. I also usually double the recipe to feed a family of four. Also, if you don't like spicy food , leave out the crushed red pepper. Peppers and onions are also optional.

"Baked Alaska"
1 package (18.25 ounces) devil's food cake mix (plus ingredients to make
cake)
3/4 cup semi-sweet chocolate morsels, divided
1 package (8 ounces) cream cheese, softened
1 cup powdered sugar
1 container (16 ounces) frozen whipped topping, thawed, divided

Preheat oven to 325 degrees. Grease and flour Pampered Chef Classic
Batter Bowl. Prepare cake mix according to package directions; pour into
batter bowl. Bake 1 hour, 10 minutes to 1 hour, 15 minutes or until cake
tester inserted in center comes out clean. Remove from oven to stackable
cooling rack; cool 15 minutes. Run large spreader around outside of cake
and gently turn out onto cooling rack, large end down. Cool 3 hours.

Using serrated bread knife, trim large end of cake to level. Place cake,
large end down, onto Simple Additions Medium Square. To slice cake into
four equal layers, slice cake horizontally in half. Slice each half into
two equal layers.

Chop 1/4 cup of the chocolate morsels using food chopper; set aside.
Place remaining chocolate morsels in small Micro-Cooker; microwave,
uncovered, on high 20-60 seconds or until melted and smooth, stirring
after each 20-second interval. In clean Classic Batter Bowl, whisk cream
cheese until smooth using stainless steel whisk. Add powdered sugar;
whisk until smooth. Stir in melted chocolate; mix well. Fold 2 cups of
the whipped topping and chopped chocolate into cream cheese mixture
using classic scraper. Using small spreader, spread bottom layer of cake
with about half of the filling, forming a 3/4-inch layer. Repeat with
remaining layers and filling, ending with the top layer of cake.

Spread any remaining filling over outside of cake to create a smooth
surface. Frost cake with remaining whipped topping.

To form decorative peaks, press spreader into topping and pull away.
Repeat over entire surface of cake. For easier slicing, refrigerate cake
at least 30 minutes.

To easily cut cake into servings, cut cake into eight wedges from top to
bottom using utility knife. Carefully insert Slice 'n Serve horizontally
into each wedge, dividing into two equal portions.

Yield: 16 servings

Filling variations:

Strawberry Splash: Omit chocolate morsels. Add 1/2 teaspoon unsweetened
strawberry drink mix powder (such as Kool-Aid) to cream cheese mixture.
Stir 1/4 cup chopped strawberries into cream cheese mixture. Proceed as
recipe directs.

Magnificent Mint: Omit 1/2 cup melted chocolate. Add 1/4 teaspoon
peppermint extract and 3-4 drops green food coloring, if desired, to
cream cheese mixture. Proceed as recipe directs.

This recipe is made using Pampered Chef products. If you don't use pampered chef. A large oven safe measuring cup works very well to bake the cake. I have also used various tube shaped pans. This is a very sweet recipe and seems to make the kids exceptionally hyper after eating just a small piece. I don't make it often. But, it makes for a fancy addition to parties.

Mexican Pizza

Ingredients:

1 (16 ounce) can refried beans
1 pound ground beef
1 (1.25 ounce) package taco seasoning mix
1 tablespoon vegetable oil
4 (6 inch) corn tortillas
8 ounces shredded Cheddar cheese
8 tablespoons sour cream
2 roma (plum) tomatoes, chopped
2 green onion, chopped
1 (4 ounce) can diced green chiles, drained
1/2 avocado, diced
1 tablespoon black olives, sliced

Directions:

Heat the refried beans.
In a large skillet, brown the ground beef. Stir in the seasoning packet.
Preheat oven to 350 degrees F (175 degrees C).
Place a small amount of vegetable oil in a large skillet. Let the oil heat, then place one corn tortilla in the skillet. After 15 seconds, flip the tortilla over and let it fry another 15 seconds. Repeat this process with the remaining tortillas, letting them drain on paper towels once they have been heated. When the tortillas have drained, arrange them on a cookie sheet.
Spread a thin layer of beans on the tortillas, followed by a layer of beef, and cheese.
Bake the tortillas in the preheated oven for 20 to 30 minutes. Slice the tortillas into wedges and arrange them on plates or a serving platter and garnish them with the sour cream, tomatoes, green onions, chiles, avocado, and olives.
